Let’s be honest; okra isn’t a traditional vegetable that we have on our grocery lists. I wouldn’t even be surprised if someone reading this is wondering what this “exotic” vegetable is. Okra (also known as ladyfingers) is widely popular in Africa, India, South America, the Caribbean, and the Middle East. Those who have tasted okra either love or loathe it, less to do with the taste and more to do with the somewhat slimy texture.

Don’t let that discourage you from giving this nutrient-filled veggie a try. This flavorsome and tasty recipe will ensure you have a great first-time experience (or make up for a bad one). This is one of the most delicious ways to cook okra. As a matter of fact, Okra (Bhindi sabzi) is one of the most loved and prominent Indian vegetable dishes. It’s a personal favorite of mine that doesn’t require any complicated ingredients. So, let’s dive right into it!

Ingredients:

  • 2 cups okra ( wash and dry okra before chopping to medium size)
  • 1 tomato (blended purée)
  • 1 medium onion (finely chopped)
  • 1 tsp chili powder
  • 1 tsp salt
  • 1 tsp turmeric
  • 2 tbsp garlic/ginger paste
  • coriander (chopped for garnishing purposes)
  • 2 tbsp olive oil

Directions:

Wash and dry the okra to avoid/limit the sliminess (mucilage) released when cut. After the okra is patted, dry chop to medium size.

Add chopped tomato and 1/2 cup of water to the blender until you have a purée and set aside for later use.

Add 2 tbsp of olive oil and heat pan over medium heat. Next, add the finely chopped onion and sauté until golden brown.

Then add the garlic-ginger paste and mix well.

Put in the tomato purée that was set aside. Blend well with the sautéed onion.

Add all the spices (1 tsp turmeric, 1 tsp salt, and 1 tsp chili powder). Blend the spices well and let simmer for about 5 min.

Wait until the sauce begins to simmer and then add okra (bhindi) to the pan. Mix until you get a thick paste.

Continue mixing until all the liquid is dry, and the sauce is nice and thick. Once it is thick enough, your okra (Bhindi) vegetable dish is ready to eat.

Don’t forget to garnish your veggie masterpiece with coriander. And yes, it tastes as amazing as it looks. So enjoy, and happy munching!
