Salad SO GOOD, It Should Be Considered Dessert!

This salad is an explosion of flavor in your mouth!

It’s hard to find an everyday salad that goes well with every meal. When salads are discussed, this is the one recipe I am always happy to share. This salad is simple, satisfying, and versatile. You can have it as an appetizer or a meal, have it alone, or pair it with your choice of chicken or fish. Either way, you’ll find yourself making this a lot more often because it’s that good. Here’s what you’ll need:

Ingredients:

  • Your Choice of Salad (I usually use Romaine lettuce, used a box of spring mix for this recipe)
  • Half a Red Onion thinly sliced
  • Baby Cucumber chopped
  • Half a cup of Cherry Tomatoes sliced in half
  • Half a cup of stuffed Manzanilla Olives or Kalamata Olives
  • Feta Cheese to garnish
  • 2 tbsp Avocado Oil (Olive Oil will do)
  • 2 tbsp Balsamic vinegar
  • 1 tsp Oregano
  • 1 tsp Basil
  • 1 tsp Parsley
  • 1 tsp Kosher Salt (regular salt will do)
  • 1 tsp Black Pepper
  • Squeezed Lemon Juice (optional)

Directions:

Wash and dry the spring mix. I added more spinach to my spring mix. Add 2 tbsp of Avocado Oil and 2 tbsp of Balsamic Vinegar to the salad. Do not mix anything yet. Wait until everything has been added to the salad, save all the mixing until the very end.

Add the sliced cherry tomatoes, thinly sliced red onion, the chopped cucumber, and the stuffed Manzanilla Olives.

Then add all the spices: the Kosher salt and black pepper, followed by the oregano, basil, and parsley.

[OPTIONAL: If you want to add the squeezed lemon juice, do it now]

If not, then go ahead and mix everything together. Be sure to mix well.

Add your desired amount of feta cheese for garnishing. Crumble with your hands or with the tines of a fork.

Go ahead and mix one last time.

And voila – your delicious salad that’ll start a party in your mouth is all ready to enjoy. Happy munching!
