The Pasta You’ve NEVER tasted and One You’ll Never Stop Making

If I didn’t already have you at that title, then the pasta recipe I’m about to share will surely do the trick. I am a bit of a foodie, I mean really? Who isn’t at this moment of our lives? We all have nothing but an abundance of time to do all the things we only used to dream of. Eating, sleeping, binge watching Netflix, and mindlessly eating again.

One of my favourite things to eat and cook is pasta. Because it’s delicious, easy, simple, and loaded with carbs, a woman’s frenemy. Pasta is a very versatile dish and you can pair it and make it however you’d like.

This pasta recipe was created by my mother-in-law who decided one day to introduce Italian pasta to Indian curry, and voila a masterpiece was created. I am a lover of both Indian and Italian food so this was the best of both worlds, and I wasn’t complaining then and am definitely not complaining now. And neither will you once you try it.

Ingredients:

  • 1 to 2 cups Orzo pasta
  • 1 Boneless Chicken Breast (cut in cubes)
  • 1/2 an onion (diced)
  • 1 tomato (blended to puree)
  • 4 cloves of garlic
  • 1 thumb of ginger (approx)
  • 1 tsp salt
  • 1 tsp turmeric
  • 1/2 tsp red chilli powder
  • 1 cinnamon stick
  • 5 cloves
  • A pinch of cumin seeds
  • Finely chopped coriander for taste and garnishing

Instructions:

First bring a large pot of water to a boil. Add salt to taste and then add your orzo pasta. Allow pasta to cook according to the package cooking time

Next add your chopped tomato, garlic cloves, ginger to the blender. Add 1/4 cup water and blend on high until you’ve gotten a nice tomato puree. When done, set aside for later use.

In a separate pot add 2 tbsp of olive oil and add your chopped onions. Sautee until they are golden brown.

Once the onions have sautéed into a beautiful golden brown color. Add the tomato puree to the onions. Next add the spices (salt, turmeric, and red chilli powder). Be sure to mix well every time you introduce a new ingredient to your pot.

Once your spices are nicely blended with the tomato puree, add the cinnamon stick. Your tomato puree might be thickening so go ahead and add approximately one quarter cup of water. Throw in the cloves and soon after add the diced chicken breast.

At this point your kitchen should be filled with the savoury aroma from the blended spices. While the chicken is still cooking add a pinch of cumin seeds and continue mixing. Once the chicken is fully cooked add your desired amount of freshly chopped coriander to the pot for garnishing and flavour.

Drain the orzo pasta and add to the pot and mix until pasta and sauce have blended well together. Afterwards, cover pot with lid and allow it to steam for a few minutes before eating.

Well, here is the finished product, in under 30 minutes. And yes it is as good as it sounds and looks. Enjoy this blast of fusion flavor. Happy munching!
